Potato, Po-Tot-O

My amazing husband made this one chilly evening, after I was inspired to make a baked potato soup.  I assisted as sous chef and photographer.  We ended up with the most amazing Baked Potato and Leek Soup topped with a flavorful tomato compote. 


You can see the tempeh strips (vegan bacon) tucked underneath the array of toppings.  As always, 100% vegetarian.  I prefer the Organic Smoky Tempeh by LIghtlife whenever I need a bacon-type flavor.
